Gathering ice and water in its most ancient forms from the edge of the world.
We are journeying to the Nordenskiöld glacier system in Svalbard to collect water and ice that has been frozen for centuries. Each sample tells a story of atmosphere, time, and stillness — water that fell as snow before the industrial age, compressed into crystal by the weight of winters.
Working with local glaciologists and Arctic stewards, we are carefully sampling ice cores, meltwater streams, and calving fragments. Each form — from ancient compressed ice to fresh glacial runoff — carries a distinct mineral fingerprint and texture on the palate.
These waters will become the foundation of our first Arctic collection — experienced as hand-carved ice, chilled pours, and vapor — paired with field recordings captured on location. The silence of the Arctic is as much an ingredient as the water itself.

Our inaugural experience draws from the Mt. Tam Watershed in Marin County. A five-course tasting menu of water sourced from Tam — exploring the watershed from ridge to fog to creek to glass. Intimate, invite-only gatherings in a setting worthy of the source.
